Cucumis sativus 'Lemon Cucumbers'

Just Cuke It.

Fun little cucumbers without the extra.

Lemon Cucumbers are a little more mild than actual cucumbers, and half the size, making a fun lunch or dinner treat without any leftovers.

Making its debut it the late 1800's, these mini's have a thin, tender skin that some may find easier to digest. When picking out the perfect cuke, the proper size would be slightly smaller than the size of an orange. Anything larger will be quite seedy.

If you're interest has now been piqued about lemon cucumbers, you can generally find them at your local farmers market, or they are also commonly found in indian markets. Wondering how you can grow your own? Well, a cool climate is best.

Below you'll find a recipe for Pomegranate Lemon Cukes, hope that you are able to find and delight in them!

1/2 cup pomegranate infused red wine vinegar

2 tsp tellicherry ground black pepper

1/2 cup pomegranate seeds

1/2 cup sunflower seeds

Combine sliced cucumbers, pomegranate seeds, and red wine vinegar in medium sized bowl with lid. Close container, shaking contents for approximately two minutes. Open and add parmesan, chandoka cheese and sunflower seeds, top with tellicherry ground black pepper, and enjoy!
