Fried Apple Stuffed Pork Chops

As much as I love an amazing dinner.. let's be honest, life gets busy, and sometimes, I just do not feel like making it!

However, on days that are a bit brisk, even if I've been super busy, I make time to prep and enjoy comfort food. This past Wednesday temps did not leave the forties, and into the kitchen I went.

When I have the time, I tend to use all fresh ingredients, otherwise I get the next best thing and make it work for myself.. Hah.

This weeks highlighted dish was Fried Apple Stuffed Pork Chops.

What you'll need:

One Cup Pear Juice Nectar

Honey ( You'll use this to drizzle over the top of the pork chops)

Fresh Parsley

Two Cups Goat Cheese

Yes, I totally cheated here.. but they work. Fried Apples. Hah. Hah. HAH.

Two Pork Chops

Alaea Salt (two tsp) and Black Pepper (two tsp)

Preheat your oven to 375, and after cutting pork chops open (about 80%) sprinkle alaea salt and pepper over top, bottom, and inside chops. Next evenly distribute parsley (leave 10% of parsley off) and apples into chops.

Next, after evenly adding goat cheese, bring chops together to close. Add remaining parsley on top. Pour pear nectar over chops, then sprinkle honey over the top of the chops ( a liberal amount.)

I wanted to make this an all in one dish, so I cut up four potatoes, added them to the casserole, and cut butter into a couple of cubes, topping with minced garlic. Place in the oven (uncovered) for 35 minutes.

Viola!

Dinner is served.
