Over the holidays, spending time with beloved friends was priority numero uno, and lots of holiday treats, wines, brandy and rum happened.

I literally almost cried because I did not want to take down the holiday decorations last week. I also.. however.. did not want to be the person that kept them up year 'round, so down they went.

It's also no secret that I enjoy cooking, no matter the season. Each group that we entertained had different little things to snack on and so on.. two of my favorites over the season were the slow cooker cranberry marmalade meatballs and stuffed cornish hens.
The Cornish hens went over very well, and what a fun set of friends that we had over to 'break bread' with that evening. The recipe I created can be used year 'round. You'll need:
Two to six cornish hens, depending on party size.
12 to 15 sprigs, fresh rosemary
1 cup, fresh thyme
10 small red potatoes
3 oranges, cut into eight slices
3 lemons, cut into eight slices
1 cup, honey
1/2 cup sesame seed oil
1/2 cup cracked black pepper
1 cup, melted butter
1/2 cup, alaea salt
Preheat oven to 275. Prep hens by cleaning properly. Have large casserole dish ready with foil to fully cover each hen.
Stuff hens with two to three red potatoes, as well as two to three slices of lemon and orange. Next, brush hens with melted butter (both sides) (melt butter for about 30 seconds in microwave or ten minutes on stove top.) After that, brush hens with honey (both sides.)
Evenly sprinkle alaea salt, thyme, and rosemary sprigs onto hens. Next sprinkle cracked black pepper, and last.. drizzle sesame seed oil onto cornish hens, and add remaining sliced lemons and oranges to top.
Wrap in foil and cook on 275 for 4.5 hours. Open foil for all hens and increase temp to 400 and cook for an additional ten to twenty minutes.
For the meatballs you'll need:
4 lbs, ground turkey
2 cans cranberries (non jellied)
1 jar, orange marmalade
10 cloves, garlic
1/2 cup sriracha sauce
1/2 cup cracked pepper
1 bunch, scallions
Shape meatballs into small, bite size amounts, add to slow cooker. Add cranberries, contents of jar of marmalade, 10 garlic cloves (chopped) sriracha sauce, cracked pepper, and scallions (finely chopped) to slow cooker. Cook on low for 5 hours.
