Easy Dish Life: Rock Salt Cracked Pepper Shrimp

It's no secret.. I'm a foodie.

Like so many of us, my life is crazy busy.. and even if I'm not going out to a restaurant to dine, I still love to have mouthwatering meals, preferably without using the whole day to make them. Lol.

Shrimp has been the seafood of the moment around these parts. Seriously, I've been wanting it everyday for some reason, so I made a stop at the local market and bought a pound and a half of shrimp, and let my creative juices flow.

Rock Salt Cracked Pepper Shrimp

You'll Need:

a pound and a half of shrimp (shell off)

one half cup cracked pepper

two tsp rock salt

one half cup basil leaves

one lemon half

two tsp olive oil

On a medium low setting, warm olive oil. After 2 minutes of warming oil, add rock salt and basil leaves, heating all together for about 5 minutes. Next, squeeze the lemon into the oil blend, adding cracked pepper and shrimp last.

Sautè together (still on medium low setting) for 8 to 10 minutes.

Simple. Delicious. SO GOOD.

To make it dinner worthy, cut up four sweet potatoes (wedge size slices.) Preheat oven to 325. Add a light coating of olive oil to a non stick baking pan. Add wedges, single file, onto pan. Sprinkle cumin and cinnamon onto wedges, bake for 25 to 30 minutes. Once you remove them from oven, drizzle honey over slices, let cool ten minutes and enjoy!
